Taco Tuesday Recipe + Diffuser Blend

If you’re like my family, you love Taco Tuesday! Below, I’m sharing our favorite fajita recipe plus a diffuser blend you can throw in your favorite diffuser (we love the Aria) to spice up your home the next time you’re hosting Taco Tuesday!

Note: We use clean, organic ingredients as much as possible, and we suggest choosing organic as much as possible for your family too!

JOHNSON FAMILY’S FAVORITE FAJITAS


FAJITA BLEND INGREDIENTS

  • 1.5 lbs. boneless, skinless free-range organic chicken breasts
  • Real Salt
  • 2 tbsp. EVOO (Extra Virgin Olive Oil)
  • 1 large onion, sliced lengthwise into strips
  • 3 bell peppers of various colors, sliced into strips

MARINADE

  • 2 tbsp Lime Juice or 1 drop Lime Vitality Oil
  • 3 tbsp. Organic EVOO
  • 1 Organic Garlic Clove, minced
  • 1/2 tsp. Real Salt
  • 1/2 tsp. Ground Cumin
  • 1/2 tsp. Chili Powder
  • 1/2 Jalapeño or Pablano Pepper, seeded + minced
  • 1/4 c. Cilantro, chopped, or 1 drop of Cilantro Vitality Oil 

SERVE WITH:

  • 8 to 12 tortillas (homemade is best or use your favorite clean brand)
  • Shredded Cheese
  • Salsa
  • Sliced Avocado or Guacamole
  • Plain Greek Yogurt (in place of sour cream)
  • Romaine Lettuce or Spinach

DIRECTIONS:

  1. Mix all the marinade ingredients together in a glass bowl. Add chicken and mix well. Cover and marinate at room temp. for 30 minutes if short on time. We prefer to marinate for up to 8 hours in the fridge for maximum flavor and moisture.
  2. Grill the chicken. Once cooked, remove from grill and stack them on a plate. Let them rest, covered, for 5 minutes.
  3. While chicken is grilling, cook the onions and peppers. Add a Tbsp. of EVOO to a cast iron pan on high heat. Once hot, add the onions and peppers to the pan. Use a wooden spatula and stir to coat the onions and peppers before spreading in an even layer in the pan. Let cook, undisturbed, 2 min. Stir and continue cooking until softened and blackened somewhat.
  4. Once your veggies are cooked and chicken has rested, slice the chicken into strips.
  5. Serve with the peppers + onions, warm tortillas, and sides of shredded cheese, lettuce/spinach, greek yogurt, salsa, and avocado or guacamole.
  6. Enjoy!
